Bananas are a nutritious fruit to incorporate into a snack, smoothie or baked dessert. They are delicious when freshly sliced on top of oatmeal, peanut butter toast, or pancakes. However, when they get overripe, you may not enjoy them as much. They get covered in brown spots and the texture isn’t the same. Even with those unappealing brown spots, don’t toss them away. From ice cream on a hot summer day to warm banana bread, here are some fun and creative ways to use up those overripe bananas!
1. Banana Bread, Muffins & Cakes
Overripe bananas are perfect for baking because they bring natural sweetness into a recipe. Place spotty or even blackened bananas in your fridge until you decide to bake. The truth is, the darker the bananas, the better the flavor of your baked product.
If your bananas are too mushy to be sliced on top of your pancakes, mash some up and stir it into your batter. It helps moisten the pancakes and adds sweetness.
Along the same lines of pancakes, mash up an overripe banana and stir it into your bowl of warm oatmeal. Top it off with some walnuts, cinnamon, and brown sugar if desired.
Blending your overripe bananas into a smoothie gives it a creamy component. Blend it up with some peanut butter, cacao powder, almond milk, and ice cubes, and you’ve got yourself a refreshing post-workout smoothie.
Adding bananas to cookies makes them more soft and tender. Although it yields a softer cookie, it’s a great way to sweeten up your baked cookies without excessive sugar. Mix together 1 ripe banana and 1 cup of raw oats. Shape them into cookies and bake at 350˚F for 15-20 minutes.
6. Ice Cream
If you have too many overripe bananas, peel or slice them and place into a freezer friendly bag. When you’re craving something sweet, blend them up to create banana ice cream. You can add a pinch of cinnamon or drizzle of maple syrup but it’s definitely not needed. Since bananas are naturally creamy, this is a great alternative for ice cream cravings.
Get creative in the kitchen and incorporate bananas into a variety of your favorite recipes!
