Heart healthy, head healthy Veggie Lentil Soup
We know that omega 3 fatty acids, magnesium, riboflavin and many other nutrients are not only healthy for your heart, but also have shown to reduce the occurrence of Migraines for some people. If you’ve found some of these nutrients to be helpful in taming Migraine, you’ve got to try this lentil soup!
1 cup spinach
1 cup crimini mushrooms
½ cup celery (chopped)
½ cup carrots (peeled and chopped)
¾ cup dry lentils (or 1 & ½ cups soaked)
2 cups organic, low-sodium vegetable or chicken stalk*
2 tbsp flaxseed oil
3 tbsp olive oil
Migraine-friendly seasonings of your choice
*You may use water in lieu of stock if you can’t find organic/low sodium
-Soak lentils in water or stalk overnight, if dry
-Clean and chop all vegetables
-In medium frying pan, sautee mushrooms and spinach with 1-2 tbsp olive oil until soft, set aside
-In medium-large pot, heat 1 cup stalk + 2 cups water (ratio may be varied)
-Add chopped celery and carrots
-Once vegetables have softened, add lentil, spinach and mushrooms and keep on low heat for 30-45 minutes
Serve with ½-1 tbsp flaxseed oil per bowl - Enjoy!
