Strawberries for the House

Who does not love strawberries?! They are the perfect package of taste and nutrition all in one. They are fun to pick, fun to eat and admirable, and yet you can easily have it all wherever you live. Growing strawberries is extremely easy and can be quite a return on investment. Not to mention, when you grow your own they usually taste better! So give it a go!

When growing correctly, your strawberries can produce fruit from early summer until mid-autumn. Large-fruited strawberries will also do well, and can be teased to fruit for a longer period of time. There are even varieties that are ever-bearing!

To grow strawberries all that you will need is lots of sunlight, a well-drained soil medium and regular watering. Sometimes I mist mine from time to time as well to aid in humidity and to clean off the leaves. Want more fruit? Make sure to use a balanced fertilizer to get the most out of your crop. As your plant grows you may want to have it in a hanging basket for convenient access. The pot should also be at least a 10-inch pot to provide the plant with a healthy living environment. Then you should be set. For extra fun try a larger pot with several different varieties at once!

Healthy Strawberry Cupcakes by Elana Amsterdam

½ C coconut flour

1 T arrowroot powder

¼ t celtic sea salt

½ t baking soda

4 large eggs

½ C agave nectar or  or stevia

1 T vanilla extract

½ C finely chopped fresh strawberries

 

Preheat the oven to 350°F. Line 8 muffin cups with paper liners

In a large bowl, combine the coconut flour, arrowroot powder, salt, and baking soda. In a medium bowl, whisk together the eggs, agave nectar, and vanilla extract. Blend the wet ingredients into the coconut flour mixture with a handheld mixer until thoroughly combined, then fold in the strawberries.

Scoop cup of batter into each prepared muffin cup.

Bake for 20 to 25 minutes, until a toothpick inserted into the center of a cupcake comes out with just a few moist crumbs attached. Let the cupcakes cool in the pan for 1 hour.
