Happy 2015!! I hope you have each had an amazing new year, so far. I always get so excited about all the brand new many possibilities that are ahead. The start of a new year leaves me feeling like trying out new things, whether that’s a traveling to a new city, making new friendships going on a random adventure or trying a new recipe. Haha  I figured I would start with something small and go from there J In fact, this is one that I would recommend everyone try at least once. We all get stuck in the same old rut of eating vegetables the same old way. Don’t get me wrong, I love vegetables no matter what, but it’s always nice to switch things up a bit.

Recently, I came across a new recipe and fell in love with it. Most of you have probably heard of beets. If you’re anything like me, I’ve always liked them, but never really knew how to prepare the, so I would either eat them blended up in a juice or not even bother with them all together. It’s one of those vegetables that is so easy to forget about… until now! I would like to introduce you all to the Beet Salad.  Being a traditional Swedish dish, it might look a little strange at first glance. However, I have to emphasize, this is one of the best dishes I’ve made in a long time. Best of all, with only a few ingredients, it can be made in no time.



Beet Salad

2 jars beets

2 granny smith apples

½ red onion

1 cup dairy-free crème fraiche (dairy-free sour cream works too)

1 TBL fresh horseradish

salt and pepper to taste


1.     Slice beets, apples & onion and place in a medium size bowl

2.      In a separate bowl, mix the crème fraiche, horseradish, salt & pepper

3.     Mix all ingredients together until fully combined, cover and let chill for 2 hours
