Better than Blondie
As Christmas comes to an end and the New Year is upon us, there is one thing on most peoples minds…. the dreaded “diet”. It gives me shivers even thinking about the word. Yes, I’m all for being the healthiest you possible, and the start of a new year is a wonderful time to do this. And yes, cutting down on the amount of sugar consumed is very important. However, I have to tell you something that might seem shocking to some. You can do all this and still have dessert. Yes, I said it ;) Life is all about having fun and by no means should you be miserable just because you want to be healthy. This should be something that you enjoy doing, something you celebrate. I would hope people see it through the lens of fueling the body right to make it happy and healthy, instead of what is being deprived. All you need is a little creative thinking and a couple nutritious ingredients and boom! You have yourself a super tasty dessert/snack that you don’t have to feel the least bit guilty for having.
With that being said, I’d like to introduce y’all to one of my favorite go-to desserts. It’s fast, simple and will satisfy and sweet tooth out there. If you really feel like getting fancy with this one, feel free to add in some extra goodies to spice it up a bit. Either way, this one will blow you away with how simple yet satisfying it is!
• ¾ cup pumpkin puree
• 2 tsp coconut oil
• 2 eggs (I use liquid egg whites)
• ½ tsp vanilla extract
• 1 tbsp coconut flour (any gluten free flour will work just fine)
• 1 tsp ground cinnamon
• 1 -1 ½ cups unsweetened shredded coconut (use less for thinner cookies or more for more dense cookies)
• Optional: stevia sweetened chocolate chips, cocoa nibs, nuts, dried fruit… be creative and see what other tasty variations you can come up with!!
-Preheat over to 350 degrees.
-Mix all the dry ingredients in a large bowl. Add in the wet ingredients and mix well. Drop spoon sized amounts onto a greased cookie sheet and bake for 15 minutes or until golden brown.
