New Age Mac & Cheese

Better than Blondie


The ultimate southern comfort food, Mac & Cheese. I know the thought of this dish brings a smile to most of your faces! It’s one of those staples that can instantly comfort anyone. Kids and adults alike flock to this creamy, warm, satisfying dish. The big question is, how do you make such an iconic dish healthy and still taste amazing? My version definitely isn’t your mom’s mac & cheese, but, let me tell you, this is one you’ll want to keep around. ;)

Ask most people what goes into traditional mac & cheese they will probably list the same 2 ingredients: cheddar cheese & elbow macaroni. And, as tasty as this might be, it’s not an ideal combo. It’s a ticking time bomb waiting to happen. The high cholesterol, high fat and high carb load is more than anyone needs in one dish. But wait!! Before you ban this dish forever, let me tell you about a mind blowing alternative! It’s loaded with vitamin A & potassium, and if that’s not good enough, it’s even gluten free & vegan. Score!!

 

Spaghetti Squash

4 tablespoons coconut oil

4 tablespoons sweet rice flour(can find this at Whole Foods)

2 1/2 cups unsweetened almond milk

2 heaping tablespoons nutritional yeast (add a little extra if you want a stronger cheese flavor)

1/2 teaspoon Dijon mustard

1-2 teaspoons golden balsamic vinegar

1/2 teaspoon sea salt

½ teaspoon of garlic (fresh or powder)

1/4 teaspoon nutmeg (optional but I highly recommend it!)

1/2 teaspoon turmeric (optional, adds yellow color)

 

“Macaroni”

  1. preheat oven to 375ºF

  2. prepare the spaghetti squash by cutting in half and removing the seeds

  3. place on cookie sheet and bake for 30 minutes or until tender

  4. once cooked set aside and let cool

“Cheese”

  1. heat the coconut oil in a saucepan on medium heat & stir in the sweet rice flour

  2. continually mix for about 10 seconds or until it thicken, then reduce the heat

  3. to this, add the remainder of the ingredients & mix well

Using a fork, scoop out the inside of the spaghetti squash & add add to the cheese mixture

Stir well to combine & ENJOY!
